Back in 2014, when Mrs. Betty retired, TCIS published a cookbook with TCIS employees’ favorite recipes. Julie contributed this one and was a surprising hit. My kids love them with dark chocolate chips added. YUM! We hope you enjoy them.

Ingredients:
1 banana1/2 tsp. vanilla extract
1/2 cup rolled oats2 tsp. chopped walnuts
2 Tbsp. low-fat cottage cheese2 tsp. maple syrup
2 egg whites
Directions:
In a blender, combine banana, oats, cottage cheese, egg whites, and vanilla. Blend until smooth then stir in walnuts.
Heat a large skillet over medium heat and coat with nonstick cooking spray.
Pour batter into skillet to make two 4-inch pancakes, cook 3 minutes on each side.
Drizzle with maple syrup
